Position Overview:

The primary responsibility of the Assistant Director of Beverage is to provide leadership needed to ensure world class beverage service. This position is responsible for the management of all aspects of Beverage Department, in accordance with hotel standards.  Directs, implements and maintains a service and management philosophy which serves as a guide to respective staff. All duties are to be performed in accordance with departmental and The Venetian | The Palazzo Casino Resort’s policies, practices, and procedures. 

Essential Duties & Responsibilities:

  • Maintain standards & regulations
    • Constantly seek ways to improve quality
    • Develop and maintain 4-Star standards
    • Provide feedback to staff on their performance.  Handle disciplinary problems and counsel employees according to hotel standards
    • Develop and maintain ongoing training initiatives (daily and monthly)
    • Maintain complete knowledge of and comply with all departmental policies/service procedures/standards
    • Maintain complete knowledge of correct maintenance and use of equipment.  Use equipment only as intended
    • Be familiar with all hotel services/features and local attractions/activities to respond to guest inquiries accurately
    • Monitor and maintain cleanliness, sanitation and organization of assigned work areas
    • Consistently demonstrate Venetian Resort Hotel and Casino core values.
    • Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving
    • Assist staff with their job functions to ensure optimum service to guests
  • Maintain knowledge of current information
    • Know Hotel occupancy and arrivals & departures numbers
    • All liquor brands, beers and non-alcoholic selections available to Beverage Department Service
    • Having a working knowledge of the characteristics and description of the wines on the wine list
    • Know specifications of glassware and garnishes for drinks
    • Stay up to date of daily menu specials, 86'd items
    • Know schedule for in-house group activities, locations and times
    • Inspect grooming and attire of staff; rectify any deficiencies
    • Inspect, plan and ensure that all materials and equipment are in complete readiness for service; rectify deficiencies with respective personnel
    • Constantly monitor staff performance in all phases of service and job functions, ensuring that all procedures are carried out to departmental standards; rectify any deficiencies with respective personnel

Additional Duties & Responsibilities:

  • Beverage related
    • Check storage areas for proper supplies, organization and cleanliness
    • Establish and maintain par levels for products, supplies and equipment. 
    • Complete requisitions to replenish shortages or additional items needed for the anticipated business
    • Requisition linens/skirting required for business and assign staff to transport such to Beverage Department Service
    • Assign work and side duties to staff in accordance with departmental procedures
    • Communicate additions or changes to the assignments as they arise throughout the shift
    • Identify situations, which compromise the department's standards and delegate these tasks
    • Attend menu and wine tastings
    • Inspect bar set-ups; check for cleanliness, neatness and agreement departmental standards; rectify deficiencies with respective personnel.
    • Organize, coordinate, and direct staff in set-up, service and breakdown of special events in accordance with departmental standards; follow up on special arrangements with respective personnel
    • Complete and direct scheduled inventories
    • Complete work orders for maintenance repairs and submit to Engineering
    • Contact Engineering directly for urgent repairs
  • Human Resources
    • Recruit candidates who demonstrate Venetian Resort Hotel and Casino core values
    • Manage department staff including recruiting, discipline, and supervision responsibilities
    • Interview Beverage Department Service applicants
    • Use Predictive Index and Panel Interviews as tools when evaluating all candidates
  • Communication matters
    • Ensure essential information is publicized to employees timely
    • Use appropriate communication mediums to relay ordinary information
    • Contribute articles for departmental newsletter
    • Conduct monthly departmental meetings
    • Document pertinent information in department logbook
    • Conduct pre-shift meeting with staff and review all information pertinent to the day's business
  • Staff related
    • Ensure all closing duties for staff are completed before staff sign-out
    • Prepare weekly work schedules in accordance with staffing guidelines and labor forecasts. 
    • Adjust schedules throughout the week to meet the business demands
    • Administrate staff request for days off
    • Foster and promote a cooperative working climate, maximizing productivity and employee morale
    • Ensure personnel rectify any cleanliness/organization deficiencies

Additional Duties & Responsibilities:

  • Guest related
    • Anticipate guest’s needs, respond promptly and acknowledge all guests, however busy and whatever time of day
    • Implement systems to seek feedback from guests regarding quality of service and product
    • Maintain positive guest relations at all times
    • Resolve guest complaints, ensuring guest satisfaction
  • Computer P.O.S.
    • Update P.O.S. menu changes
    • Know P.O.S. hardware
    • Know P.O.S. Software programming
    • Develop and maintain manual back-up system & procedures
    • Access all functions of the P.O.S. system in accordance to specifications
    • Restock journal tape and change ribbons as needed.
  • Administrative Functions
    • Attend designated meetings
    • Complete all paperwork and closing duties in accordance with departmental standards
    • Compile and maintain daily weekly and monthly check lists
    • Review sales for previous day; resolve discrepancies with Accounting.  Track revenue against budget.
    • Ensure that staff reports to work as scheduled.  Document any late or absent employees.
    • Answer phone within 3 rings, using correct salutations and telephone etiquette.
    • Prepare weekly forecast of revenues, covers and labor costs.
    • Prepare and submit daily/weekly payroll and tip distribution records.
    • Respond to all pages by beeper promptly.
  • Consistent and regular attendance is an essential function of this job
  • Performs other related duties as assigned

Additional Duties & Responsibilities:

Minimum Qualifications:

  • 21 years of age
  • Proof of authorization/eligibility to work in the United States
  • High School Diploma or equivalent
  • College degree or equivalent practical experience, Fluency in a second language, preferably Spanish, certification of previous training in liquor, wine and food service, previous Culinary training, certification in C.P.R., ability to suggestively sell, creative talent, computer experience with Word and Excel (or similar)
  • Three years of experience as a Food and Beverage Manager
  • Previous guest relations training
  • Ability to communicate effectively in a positive/upbeat fashion utilizing English; both in oral and written form, interpersonal skills with focused attention to guest needs to deal effectively with all business contacts, maintain a professional, neat and well-groomed appearance adhering to VCR appearance standards, maintain consistent adherence to the VCR Unmatched Guest Service Standards, work varied shifts, including weekends and holidays.

Physical Requirements:

  • Essential: Work in a fast-paced, busy, and somewhat stressful environment
  • Maintain physical stamina and proper mental attitude while dealing effectively with guests, management, team members, and outside contacts while working under pressure and meeting deadlines
  • Must be able to frequently move freely about the office, maintain manual dexterity to access computer via computer keyboard and operate office equipment, such as telephones, copiers, fax machine, etc., withstand various activities such as frequent walking, sitting for long periods and withstand prolonged standing, stretching, bending and kneeling without restriction
  • Be able to work indoors and be exposed to various environmental factors such as, but not limited to CRT fatigue, noise, dust, cigarette smoke, and be able to access all areas of the property
  • Exert physical effort and capable of lifting a minimum of 20 lbs, endure various physical movements throughout the work areas, including but not limited to stooping to view ground level and reaching two feet higher than one’s personal height, remain in a standing position, including walking, for 2 continuous hours throughout one’s work shift, satisfactorily communicate with guest, management and co-workers to their understanding, use sight to perform job functions, to adequately taste and smell to ensure product quality and safety
  • Desirable: Remain in a standing position, including walking, for 6 - 8 continuous hours throughout one’s work shift
